It’s loaded with toasted pecans for that little extra crunch and flavor to each ball. The hallmark of the cookies is their powdered sugar coating. The sweetness of these cookies will leave the fingertips, of happy eaters.

Snowball cookies

ITEM
1 ½ Cups pecans divided
2 cups all-purpose flour (280g)
¼ tsp. kosher salt
1 cup unsalted butter, softened to 60 to 65oF(250g)
1/3 cup granulated sugar 65g
1 tsp pure vanilla extract
1 ½  cups powdered sugar 170 g
  1. Setting the oven rack to the middle position. Preheat the oven to 325oF (160OC)
  2. Lining two baking sheets with parchment paper and set aside.
  3. Toast the pecans in the oven on a small sheet for 6 mins, stirring the nuts halfway through. Transfer to a plate and allow cooling, about 10 min.
  4. Add 1 cup of the pecans to a food processor and pulse about 15 times, until a finely ground texture is achieved. Transfer to a medium-sized bowl.
  5. Add the remaining ½ cup of pecans to the food processor and pulse and 3-5 times, until roughly chopped. Add to the finely ground pecans.
  6. Add flour and salt to the pecans, and stir to combine.
  7. Cream the softened butter and sugar in a mixing bowl, or stand mixer on medium speed, for 3 minutes. Rake down the sides of the bowl halfway through creaming.
  8. Add vanilla and mix on low speed until incorporated, 30 seconds
  9. Add the nut mixture and combine on the lowest speed until just incorporated and the dough comes together in about 30 seconds.
  10. Measure the dough into leveled 1 tbsp. portions. Roll into a ball and place 1 inch apart on the baking sheets, they should be about 1 inch apart on the baking sheets; they should be about 1 inch in diameter. Bake 20 cookies per pan.
  11. Bake one cookie sheet at a time, until it turns light golden in color and the bottom is browned about 18 mins.
  12. Cool the cookie  on the pan for 5 mins
  13. Add sugar powder to a shallow bowl. Roll the cookies in the powdered sugar while it’s still warm until completely coated.
  14. Once the cookies are cooled, roll them in the powdered sugar for a second coat or sprinkle on the top with more sugar.
