INGREDIENTS

  • ½ cup unsalted butter.
  • 1 ½ cups (300g) caster sugar or fine white granulated sugar)
  • 2 large eggs
  • ¼ cup cooking oil
  • 1 tbsp (10g) unsweetened cocoa powder plus 1 tbsp. extra dusting.
  • 2 ½ tbsp. (45ml) red food coloring(liquid)
  • 2 tsp. (10,l) pure vanilla extract
  • 1 tbsp. (20ml) white vinegar
  • 2 ½ cups (350g) cake flour.
  • 1tsp. salt
  • 1 cup (250ml) buttermilk*

Cream Cheese Frosting

  • 400g cream cheese, at room temp
  • ½ cup(120g) unsalted butter, at room temp
  • 2 tsp. pure vanilla extract
  • 4cups confectioners (or icing) sugar
  • 1 tbsp. lemon juice (optional ad a subtle hint of lemon.

FOR CAKE

  • Heat oven to 350oF | 1750C, with butter or nonstick oil spray Lightly grease two 8-inch cake pans and lightly dust with 1 tbsp of the sifted cocoa powder.
  • Cream butter and sugar together until light in color. Add eggs one at a time, and mix well after each addition.
  • Ina smaller bowl, add together oil, remaining cocoa powder, red food coloring, and vanilla until smooth. Keep stirring the mixture and vinegar through the creamed sugar mixture to mix it all together.

For Cream Cheese Frosting:

  • Beat together cream cheese, butter, and vanilla until smooth and lighter in color for 3-4 min. Beat icing sugar until the frosting is fluffy and light. (If the frosting is too thin, add more icing sugar and beat again until reaching your desired consistency.

Assemble Cake:

  • Transfer 1 cake onto a serving dish, flat-side down. Trimming the top dome off of the cake to create a flat bottom later. Scoop about 1 ½ -2 cups of frosting onto the cake and spread over the top.
  • Place the second cake layer on top and use the remaining frosting to cover the topside of the cake.
