Recipe for Best Christmas Peanut Butter Cookies

Breakfast cookies

To make healthy banana breakfast cookies

  • Mash bananas together with quick oats
  • Add in anything else you like
  • Bake.
  • Eat
PREP: 5 MINSCOOK:15 MINS SERVES:18 COOKIESTOTAL: 20MIN

  • 2 large ripe bananas
  • 1 ¾ cups quick oats*

OPTIONAL ADD-INS:

  • 4 tbsp. peanut flour or any nut butter
  • ½ cup chocolate chips
  • 1-2 tsp. honey (as per taste preference)
  • ½ cup cocoa nibs
  • ¼  cup Nutella or nay hazelnut spread
  • ¼ cup peanut butter chips
  • 1/3 cup crushed nuts of your choice
  • 1/3 cup dried fruit/barriers
  • 1-2 tsp. pure vanilla extract
  • ¼ cup shredded coconut
  • PREHEAT OVEN TO 175O C / 3500F
  • Mash bananas in a shallow bowl. Add in the oats and mix well to combine. Fold in any optional add-ins you like.
  • Line the baking tray/sheet with baking paper and drop one tbsp. of cookie dough per cookie onto the tray. Press down with the back of a metal spoon and shape it into cookies.
  • Bake for 15-20 min depending on your oven or until cookies are lightly golden on top and just set to touch. Keep an eye on them after 10 mins, as they can bake faster.
  • Remove and allow to cool on a wire rack.
